Roasted Fish

Have you ever wondered what else you can do with your fish other than frying it and steaming it?

On my drive back from work today, I found myself asking that question. Most Asian fish dishes requires us to either fry or steam the fish. They are yummy but sometimes, you just need a change. It's almost Christmas, and I had this sudden craving for roast chicken. Then it came to me, what about roasted fish? So I started looking it up the Internet, I found some pretty interesting recipes of baked and roasted fish. Not sure exactly what the difference are between these two but anyways, I decided to try out the roasted fish recipe as it looked easier. 

And it really was simple! And super fast!

Grilled Chicken and Broccoli with Rice and Soup

Apologies for the long delay in delivering this post. Have been a little distracted of late.

Nonetheless, let's see if we can cook tonight's dinner in under an hour! For tonight, I've decided to cook a simple chicken meal and soup. As always, our start time -
Start Time: 6.47pm

Since I'm out of rice supply, I'll be cooking rice tonight. I usually cook enough for three meals - one for tonight, two for use on another day. Wash the rice as usual, and cook using your usual rice cooker.

A Chinese Dinner - Garlic Steamed Fish, Beans and Cabbage Soup 

Raw ingredients for tonight's dinner

For tonight's dinner, we will be cooking some simple Chinese style dishes - Steamed fish with garlic oil, stir fry french beans with carrot and cabbage soup. 
Start Time: 8.22pm
As usual, we record our start time to see if we can prepare this meal for two in 60 minutes.
Preparing the ingredients

For tonight, I will be using leftover rice. So I won't be boiling any rice. But if you are, boil it before you prepare your ingredients.

Chop enough garlic for the fish and your vegetable dish into little pieces.

Basil Chicken with Rice

Let's start the road with a  simple all-in-one dish, Basil Chicken with Rice.

Do keep in mind that the below is only a guide on what to put into your cooking and not how much to put as the amount to use is dependent on the number of people you are cooking for. When cooking, we often use "estimates" and never "exacts" as flavour and taste vary between persons. 

So, put what you think is good for you.

Ingredients:
Rice
Chicken fillets
Fresh basil leaves
Garlic
Salt
Soy Sauce
Chili Flakes
Oyster Sauce
Corn Starch
French Beans*
Olives*
Mixed Herbs*
Eggs*

Dinner is served!
